I love Italian food, I do. I do not even really think love is a strong enough word to describe my love of the stuff.Like meth to a citizen of Wasilla , I need, crave, adore Italian food.
Now, if you to come to my home, at 3 am, while I sleep, slamming down the door, aim your shotgun at me and said ” What is your favorite Italian dish?” Well, I just do not know.Lasagna and Raviolis are pretty much a toss up.
So, that craving, came back to me.I made some raviolis.You do not fight the cravings, you let them win.It is worth it, so worth it.
Butternut Squash Raviolis
Ingredients.
- 1 butternut squash, peeled, seeded, chopped into cubes.
- 1 tsp ginger
- 1 tbsp nutmeg
- dash of salt and pepper
- third of a cup of vegan butter, earth balance, or whatever brand you like.
- 2 cups of flour.I used white, but wheat or a combo would be nice, too.
- 4 tbsp cilantro
- 1 tbsp oregano
- water
- 1 tbsp olive oil
First, you will want to steam that squash! Steam it till its soft enough to mash with a fork or a masher.Which is what you should do with the squash! Mash it , baby, mash it.Now, add in all the ingredients prior to the flour.Mix it up, and put it aside.
Now for the pasta part.Mix all the dry ingredients for the pasta, the oregano, cilantro, dash or so of salt.Drizzle in the oil, mixing as you do so.Slowly add water, mixing as you pour that in, as well.
This is easy, isn’t it ? Of course, who likes hard work!i wold never do that to you, or not on purpose, anyways.
Okay,I am rambling, sorry! Lets get back to work.You want to knead that dough, knead, knead, knead.Then, on a floured surface, roll that dough out.I should also add it may be easier to make this in two parts, unless you have giant arms and massive amounts of table space.Right now you should be thinking you are a fashion designer, you want super thin dough , here.Only about one eighth of an inch.Cut squares, or circles in the rolled out dough.Try to make them all matching in size.Take one cut out, place a drop of the filling in the middle, slightly dampen the edges of the piece of dough, and cover with another piece.Now, use a fork and seal the edges of the ravioli.Repeat.
Now, you should have a whole bunch of raviolis made.Let them sit and dry out, at least an hour.this will help them keep in once piece.
To cook them, place them in salted boiling water, and let cook about 15 minutes.
if you do not wish to cook them all, freeze some and enjoy them later.
These do not really need much of a sauce, I made it simple with some oil with sauteed peas and carrots, but you could just use oil or even some melted butter.
On a side note, when people defend teabagger politics and say they are not bigots, and not a bunch of morons, just show them this.

Is may be okay to debate the facts behind global warming, sure.We do not exactly know what will happen, but they would like us to leave all pollution debates up to God.He will clean it up.Though, I am thinking they would say God would not, unless we persecute gays.Simply brilliant.
