Recently, I tried out PostPunk Kitchen’s Spaghetti-Nos.You would know that if you were a faithful follower, but I doubt that you are.That would hurt me more, but maybe I am just empathetic, who knows? Anyways, I did.
When I made that dish it reminded me of the other interesting canned Italian foods I ate as a youngster.I suppose we could maybe call them Italian loosely, very loosely.Anyways, I remembered that I used to eat something by the oh so yummy moniker of Beef-A-Roni.I am not sure how authentically Italian that is, never heard anyone order that in the North End, or any Italian eatery, ever.
They are just basically tomato sauce, a meat scrambled in, and pasta.My mother used to make something she called “Chop Suey” that was along the same line.
So, I made my own version of this, mixing two recipes I found off PostPunk, as I was not really feeling all that creative that day, other then wanting to make it.The sauce comes from the Spaghetti-Nos and the scrambled meat comes from the tempeh sausage recipe I found.
I just added a bit of browner to the crumbles, just for visuals, I suppose, and I use a bit more yeast in the cashew sauce, I use two packets, just to be fun.You should probably already know how to cook pasta, I hope.
As you can see, I am not writing out a full recipe for that, you can get all you need out of the two links, okay? Okay.
I thought Neat-A-Roni was a better name, and junk.

I also wanted to share something I also quite enjoyed, these sweet potato puffs.Now, I wanted tater tots, but had none, and I was kind of clueless in how once could make them like they come in the store bought packages.Also, it is always a bit more fun to make things then to just buy them.I am not gonna brag about some great meal I made if half of it is store bought tater tots, anyways.
I want to be able to brag, damn it.
So, I just kind of made it up as I went.Different than tater tots in that they are breaded, but whatever, you only live once, unless you are a vampire, and probably you are not, as why would you be reading a vegan food blog?
Sweet Potato Puffs Ingredients.
- Two large sweet potatoes, peeled and cut up.
- Pot of boiling water,I added a dash or tow of salt.
- Tablespoon of paprika.
- A couple tablespoons of the water the potatoes have been boiled in.Save a bit more, but when it comes to using it you want to be sparing.
- Teaspoon of salt.
- Teaspoon of pepper.
- 2 cups of breadcrumbs, in a bowl.
Do you know how to make mashed potatoes? Well, then, you know what to do.Make mashed potatoes using the sweet potatoes.But, when you mash them, use as little liquid as you can, and add the paprika, salt , pepper, or any other herb you may ant to.You want them a bit less mushy.This is key, as you will be molding them by hand into little ball or tot shapes.
Do I really have to tell you how to make mashed potatoes?Really? I refuse to.So there.
So, once you have made mashed sweet potatoes, let them cool a spell.One they are cool enough to handle, preheat your oven to 425 degrees, spray a pan, and begin molding your puff shapes.
Once you mold a puff, roll it in the breadcrumbs, then place it on the baking pan, and repeat.I think I made about 40 of them, your amounts may differ.
Bake them in the oven for about 40 minutes, moving them around so they cook evenly.
Enjoy as a side, or main course, with or without ketchup;They are your sweet potato puffs, not mine.
